Recipes - Jeff's Potato Soup

I found this recipe in "Taste of Home" years back and have held on to it, because it is perfect for a cold winter night! I have copied the real recipe, and below it, I have written how I do it, since I leave out a few ingredients and hurry the process along :) Either way this recipe rocks, especially when served with French Bread! Hope you like it as much as we do! :)

Jeff’s Potato Soup

1 celery rib, thinly sliced (I don’t use)
1 small onion, chopped
1 green onion, thinly sliced (I don’t use)
2 tablespoons butter or margarine
2 envelopes chicken gravy mix
1/4 teaspoon celery salt
1/4 teaspoon ground cumin
1/4 teaspoon Cajun seasoning
1/4 teaspoon pepper
4 cups milk
5 medium potatoes, peeled, cubed and cooked
1 cup Velveeta

In a large saucepan, sauté celery and onions in butter until tender. Stir in gravy mix and seasonings; gradually add milk. Bring to a boil; cook and stir for 2 minutes. Reduce heat; stir in potatoes and cheese. Cook and stir until the potatoes are heated through and the cheese is melted.Yields 6-8 servings.

Anne’s easier way:

Wash, peel, and cube potatoes. Boil.

As potatoes are boiling, chop onion and throw into a frying pan with butter. Sauté.

Once onions are tender, pour in gravy mix, all seasonings, and the 4 cups of milk. Stir slowly until it boils..

Keep checking tenderness of potatoes…

Once potatoes are done, drain water, pour soup into pot with potatoes.

Cube Velveeta and throw into soup. Stir until cheese melts..

Serve! :)
